Wednesday, November 17, 2021 Spicy Sweet Potato Dip -Little Dipper Crock Pot or Larger Slow Cooker (or Oven)This four ingredient Spicy Sweet Potato Dip was a nice change of pace. It came together in no time, and only needed to be heated up in the slow cooker. Spicy because I used regular Rotel, you can opt for the milder variety, and of course add some cayenne pepper, or use a hot taco seasoning for fire lovers. Simply mash, mix and heat, and your crowd will be happy in no time. If you need a last minute party treat that's different (and plays nicely with the holidays), it's hard to go wrong with this dip folks.

Spicy Sweet Potato Dip15 oz can Bruce's Sweet Potatoes, drained10 oz can Rotel or store brand, drained1 Tblsp cream cheese, in chunks1 Tblsp + 1 tsp taco seasoning, or to tasteCan be mixed right in the vessel:Mash sweet potatoes (I used a fork), stir in drained Rotel, cream cheese, and taco seasoning.Heat on low for 2-3 hours. Alternately, heat on stove or in microwave and transfer to slow cooker to keep warm. Can heat in the oven too, I'm guessing 25-30 minutes at 350 degrees.Stir to combine and serve with tortilla chips.Snack well and have a happy day:@)
I'm Joining:Full Plate ThursdayA Morning Cup of Joe5 comments: Monday, November 15, 2021 Butterballs -Old Fashioned Walnut Christmas CookiesAs we approach Thanksgiving I thought I'd share a butterball that's not a turkey:@) These Butterball Cookies are an old time recipe that requires minimal ingredients, and they have a very nice browned butter roasted nut flavor! They also don't call for eggs, in case that's important for your crew. The secret to the cookies drying out nicely is a long low baking time, so you will have to do a little planning to make them. But once baked, they'll keep for a long time, travel well, and are perfect with coffee or tea! This is a holiday recipe I've had stashed away for quite a while, I'm glad I finally tried it.
Thoughts:This is a very thick dough, I just used my hands to mix it at the end.I don't know if the cookies freeze well, but I ~can~ say the balls of dough freeze very well! Freeze individual balls on parchment or silicone and store in zip top bag. Then just take them out of the freezer, place on baking sheet for a half hour or so to thaw, and bake however many you want.My walnuts were itty bits, marketed as 'finely diced'. I'm sure anything goes as long as you can roll the cookies into small balls.If desired, you can add a light sift of powdered sugar right before serving for best presentation. I will say my cookies stayed nice and white from the original rolling in sugar though.Recipe easily scaled down to half or one fourth. One fourth makes around 30 cookies, I do suggest trying to keep them 3/4".

Butterballs1 lb butter-I used salted1 C powdered sugar2 tsp vanilla4 C A/P flour2 C chopped walnutsCream butter, slowly mix in sugar, add vanilla, cream well.Alternately mix in flour and nuts, dough will be very thick. Mix with hands at the end.Roll into 3/4" balls (keep your cookies small folks).Bake at 300 degrees for 1 hour.Cool on baking sheet for 3 minutes.Roll in powdered sugar, place on rack (a plate is ok if rolling in sugar again).Optional: Roll in powdered sugar a second time. I did do it twice.Make sure cookies have completely cooled, store in air tight container.Enjoy a cookie and have a happy day:@)

Wednesday, November 10, 2021 Italian Cornmeal Spritz CookiesThese Italian Cornmeal Spritz Cookies were written-up as Christmas Cookies but I thought the cornmeal made them great for Thanksgiving too. Wow, I love these cookies, this is a different recipe! You will notice the cornmeal flavor, and the light almond is nice. It's also a cookie that isn't as sweet as others, which lends itself nicely to some colored sanding sugar if desired. And my favorite part is, the cornmeal makes them a tad crunchy with a little chew. I'll be adding this recipe to my yearly holiday baking. Don't hesitate to try this one folks, it gets my 'darn good' label and, if you like cornmeal, I think you will be pleased.If you've ever cursed your cookie press (and yes, we've all been there),you will find this a sticky wetter dough that sticks to the baking sheets well.I do recommend using a good amount of cherry, we liked a half cherry for each cookie.
Italian Cornmeal Spritz Cookies-from Taste of Home2/3 C butter, softened1/2 C sugar2 large eggs1 tsp vanilla extract1/2 tsp almond extract1 C A/P flour2/3 C yellow cornmealRed candied cherries, cut to desired sizeCream butter and sugar until light and fluffy. Mix in egg and extracts.Add dry, mix well. Let dough sit for a few minutes so it hydrates a bit if you have the time...Load cookie press with dough using desired disc (a flower or star would be traditional). This will be a sticky dough.Press onto ungreased, cool cookie sheets 1" apart. Place a quarter half of a red candied cherry in the center of each cookie.Bake at 325 degrees for 9-11 minutes or until set. Mine took a good 8-10 minutes more, until bottoms began to get golden.Remove to wire rack to cool.

We have two options for presentation folks, this silly turkey for the kiddie table, or you could simply fill the pumpkin with skewers for a more adult looking centerpiece (mulled wine tasting party anyone?). This Turkey orPumpkin Charcuterie Skewers Appetizeris a fun seasonal way to serve party nibbles. It's very impressive and honestly, not difficult at all, it only takes a little time to assemble.Tips:The best tool for poking holes into the pumpkin is the pointy thing that comes with the pumpkin carving kits.It's best to have cheese as the last item added to the skewer. That way the food doesn't fall off when pulled out of the pumpkin.Add anything that sounds good, black olives, vegetables, different lunchmeats, make some skewers all fruit, some all cheese, etc.I used three cheeses, sharp cheddar, pepper jack has great green and red flecks, and I love the marbled colors from colby jack for this fall appy.Try to get a squatty pumpkin for best stability. After the gathering you can make some roasted pumpkin seeds too.Long stems are great for the turkey neck, short would be best for the loaded skewer theme.My turkey's hat is a k-cup. A black felt brim would be a cute addition too.Eyes were hot glued to underside of k-cup. There is a lot of wiggle room here folks, want it sweeter? Add more sugar. Want more punch from the spices? Stir in more at the end. Want to add a little something extra? I'm thinking stirring in some chopped pecans before serving would be nice.Cook this a day or two ahead, it will thicken as it chills in the refrigerator.Plan on approximately 1 C sauce from each 1 C whole cranberries.
Looking for a few other ideas?Cranberry Tangerine ChutneyLonger ingredient list and more involved, but worth it!
Slow Cooker Cranberry SauceLove the addition of bay leaves, it smells good cooking for a few hours too.

Pumpkin Spice Cranberry SauceFor each 1 C cranberries, fresh or frozen, washed, stems picked off:1/3 C sugar-add more if desired1/4 tsp pumpkin spice1/3 C water1/4 tsp pumpkin spice off stoveAdd first four ingredients to pot, bring to boil, reduce heat to simmer.Crush berries as they begin to pop, taste it and add more sugar if desired.Cook for about 5 minutes once berries are crushed.Remove from heat and stir in extra pumpkin spice.Let cool, cover and store in refrigerator to thicken.ClickHEREto sign up for email notifications for new posts!
