(FedFilQ) took charge, this annual event just keeps on getting better every year plus the new blood injected by the Filipino Students and volunteers with their beautiful performances and wonderful inputs. These Choc Chip Cookies are a favourite in our TRIBEs household, Ive been making this for years now. Easy to make and bake, can be frozen and thawed for future emergency cookie craving baking episodes. Crispy outside, chewy insidewhat more can you ask for? So, no further delay..heres my fool proof recipe for Choc Chip Cookies.

Busog! Sarap! EASY CHOC CHIP COOKIES

INGREDIENTS:

1 cup white sugar

1 cup brown sugar (compacted)

1 cup butter, softened

2 eggs (room temperature)

1 1/2 tspn vanilla extract

1 tspn baking soda

1 tspn salt (optional)

3 cup plain flour

250g chocolate chips

*used U.S Measuring Cups Spoons

PROCEDURE:

~ Preheat your oven to 180C. Place your rack in the middle of your oven.

~ In your mixing bowl, combine white brown sugars, butter, eggs and vanilla extract. Beat the mixture with your mixer for 30 seconds, then stop and scrape the side and beat it for additional 30 seconds.

~ In a clean dry bowl, place the baking soda, salt (optional) and flour together. Using the slow speed in your electric mixer, gradually add the dry ingredients to your wet mixture. Mix the mixture together for about 2 minutes then turn your speed a bit faster and add an additional 30 seconds. Remember to stop and scrape the sides to evenly mix the mixture well during this process.

~ Add in your chocolate chips and mix it in slow speed till all the chips are well incorporated with the cookie dough, set aside.

~ Lined your cookie tray with baking paper.

~ Portion the cookie dough into round balls (1 tbspn each), while placing on top of your baking paper, slightly flatten the bases (but not too much to avoid) the cookie dough balls from rolling around the tray. Evenly space the cookie dough balls about 5 cm apart for spreading. Bake for 10-12 minutes, the cookies will flatten itself while being baked so no need to flatten it with a fork or the palm of your hand.

~ Once the baking is done, please remove the baking tray from the oven and place the cookies immediately on top of your cooling wire rack. What I do is just slide the cookies including the baking paper and once the cookies are a little bit firm, thats when I slide out the baking paper and use it again for another batch.

~ Cookies will be soft when it comes out of the oven as they cool down, they will become crispy outside and chewy inside.

~ Store in a tightly sealed container once all the cookies are completely cooled down, best eaten within a week if it last that long.in our house give it 2-3 days.

MAKES: 4-5 DOZEN COOKIES (depends on the size of your individual cookie dough balls)

NOTES:

You can freeze portioned uncooked cookie dough balls for future use. Just store the dough balls in a tightly sealed container/zip lock. Before baking, just place the dough balls into your baking tray as instructed and let it thaw first for around 15 minutes. If the weather is too hot, place your dough mixture inside your fridge till it becomes firm like play dough texture before rolling it into your cookie dough balls. To tell you frankly Ive never had the urge to go to a Filipino Concert here in Brisbane before but when Ive heard from the grapevine that Lea Salonga would be performing this coming 26th July 2015 in Brisbane. I cant contain my excitement!

Whos Lea Salonga you might ask? She is just my singing idol since elementary school days. the one who sang the KLIM ad jingle that is forever etched in my brain. I love milk and I love KLIMso rich and so creamyoohwohwohwohwohwoohwoh! (sorry Im such a dag!) but seriously I love this singing artist, shes one of the best in the Philippines. Lea Salonga starred in the lead role of Kim in musical, Miss Saigon. She also did the roles of Éponine and Fantine in the musical Les Misérables on Broadway and was the first Asian Actress to do so. Who can forget the beautiful singing voice of Jasmine in Aladdin (1992), and Fa Mulan in Mulan (1998), that is Lea Salonga! She is so talented and I have to share this great news I know its only March. but still, am so excited with her Brisbane concert in July that I have to blurt it out early.

So for my fellow Lea Salonga fans out there, call Kuya Jack S. (#0404000505) for Brisbane tickets. Better buy your tickets early as the best seats are running out fast as I write this post of mine (my tickets are secured so am safelol!). You dont want to miss this concert!

Thanks to Kuya Jacks Facebook food pics from this Cafe, I have pestered Mr. H enough for us to go to Labrador for a visit last Sunday. It was an undecided trip.we didnt expect anything from our visit as it was Sunday and Kuya Jack told me that you need to ring up first to see whats available for that day. Arriving near closing time, Ive already worked up Plan Bif theres nothing left we will eat at Nonnas in Harbour Town Shopping Centre as it was close by.

Cafe de Ole mainly serve Cafe food with good coffee and because of the pressure from Filipinos, the owner decided to include some Filipino Food around the middle of last year. I mean someas in a couple of dishes as the kitchen is quite small and designed for quick cooking, reheat and toasting = cafe menu.

Once you step a foot inside the shop, you will be greeted by this poster of their Halo-Halo hanged on the right side wall. I dont know why for this instance I felt excited, just seeing their Halo-Halo poster.

This portion of Cafe de Ole is quite cosy, situated further inside the shop. They also have an outdoor eating area situated across the front of the shop.

Cafe de Ole menu prices are very affordable. If our house was situated near this shop, the whole TRIBE will be regulars because of the menu prices and it doesnt hurt that the food is good. Just to let you know, Cafe de Ole is only open for Breakfast and Lunch daily.

They got some pre packed meals to go if you want to just make a quick purchase and take it home.

They got a few Filipino Kakanin on their food display cabinet.

I know youre dying to know what Filipino Dishes was on offer that day but first lets discuss the serving portions for Pinoy Food. Cafe de Ole offers 3 sizes small, medium and large (2x ulam with rice). The Filipino Dishes that are available for the day are not visibly printed out for public viewing, I have to ask the lady (Lotlot) who serves the counter about the Pinoy Menu. She showed me a list of Filipino Dishes on a piece of paper and on the list there was Pork Adobo, Dinuguan, Beef Bistik, Sisig Pakbet from what I recalled. Ive chosen Pakbet with my Beef Bistik but sadly it has run out so I ended up with Beef Bistik, Sisig and Steamed Rice. It was Pork Adobo and Sisig for Mr. H with his rice. Weve both ordered Medium size for AUD$9.95 each, which we think was very affordable.

Heres what we ordered:

CAFE DE OLE PORK ADOBO

Tender Chunky Pork Cubes that has been lovely simmered long enough to develop that signature well flavoured Adobo sauce with rendered fat that came from the pork. This is what you expect what Pork Adobo should taste like.

CAFE DE OLE SISIG

This dish was not served like your typical Sisig on a hot sizzling plate but rest assured that it tasted really good but Mr. H and I concluded that this dish leaned more into Bopis as it has more pork liver ratio compare to the rest of the ingredients. It has that chilli medium-hot kick to it, I personally love this dish and would highly recommend this as a pulutan with your nice very cold San Miguel beer. We even ordered a takeaway container of their Sisig to take home for only AUD$12.00 so the rest of the TRIBE can have a taste of this dish.

CAFE DE OLE BEEF BISTIK

Sorry about the photo as Ive already had a couple of forkfuls of Beef Bistik and rice before I realize Ive forgotten to take pictures of the food. The Beef Bistik was well flavoured and was so good with the rice if I have to give a score out of 10, it would be around 7.5! Ive tasted Beef Bistik in other Filipino Eatery here in Brisbane and Cafe de Ole Beef Bistik comes second from the now closed Railway Asian (Filipino) Takeaway in Zillmere.

CAFE DE OLE HALO-HALO

It was Kuya Jacks Facebook Halo-Halo photos that made me want to go and check out Cafe de Ole. I dont usually eat Halo-Halo but this beckons me to order one. As you can see, its not a hybrid. the fillings in the bottom of the glass is what you expect what a classic Halo-Halo should have. The Ice was freshly shaved, topped with Vanilla and Langka (Jackfruit) Ice Cream it was really nice with just the right amount of sweetness.

It does not contain fresh fruits or some yucky flavoured Ice Creams and other unnecessary frills. straight forward good Halo-Halo.

Oooppssss. they forgot to add in 2 toppings while they assembled our Halo-Halo inside their kitchen but the forgotten toppings was quickly handed to us plated. The Leche Flan pieces was good but if that anaemic purple lump is Ube Halaya. it doesnt taste good and am glad it was not included in our Halo-Halo.

TRIBES FOODIE VIEW: As Cafe de Ole is mainly catered for western cafe food, Mr. H and I prepared ourselves that this visit will be an informal no frills lunch date. The Filipino Dishes weve eaten was good, reminiscing of Carinderia fare in a positive way. affordable and delicious!

We had a good laugh with Ate Hermie (owner) and exchange some honest opinions regarding what Mr. H and I ate. She was such a lovely bubbly character and another Filipina owner who is passionate about the Filipino Food she serves to her customers.

Heres the good news, she will be opening a Filipino Restaurant in April and the shop will be located around that area (Labrador). Ate Hermies excitement was contagious, as she tells us the details it made us really look forward to her Filipino Restaurant grand opening. Personally Im excited to visit once Ate Hermies Filipino Restaurant opens, you know whybecause if they can produce tasty Filipino Dishes in such a small cafe kitchen, imagine what the dishes they will be able to produce once they have a proper restaurant kitchen!

Time flies so fast January 2015 is about to end in a few days. I do wish, I got the same power as the guys in Matrix that I can hold time still and do my mommy duties, that would be fantastic ! But sadly I got no such said powers, so here I am typing away to write my first entry for 2015 while my washing is drying out in the sun.

Our New Year Media Noche was a simple spread with some ready made extras. In previous years, Mr H and myself tend to overkill ourselves from preparation but this New Years Eve was different as we learned to relax and unwind before midnight came.

Heres our menu for TRIBEs New Year 2015:

CRACKERS DIPS

Such a great idea as an appetizer/snack for kids while they wait for the New Years midnight snack. I was going to buy some gourmet dips but went for these dips as the kids likes the taste.

SKEWERED BAKED STUFFED PRAWNS

The Baked Stuffed Prawns were topped with a tomato/pineapple mixture with melted cheese, Mr H specialty. they were really scrumptious! Mr H tried a couple of the prawns we bought with a new marinade and visualized it skewered. the result was pretty good with a Mediterranean take.

LUMPIANG SARIWA

Ive have prepared this Lumpiang Sariwa (Filipino Fresh Spring Rolls) earlier that day and just kept the container inside the fridge till it was ready to be served. Filling was composed of mixed sliced vegetables with pork mince.

CRISPY PATA

From all the Crispy Pata I have cooked, this batch was far the best Ive deep fried. The outer skin was crispy and the meat inside still retained its moisture.

PORK BBQ STICKS

We only grilled a couple of Pork Bbq Sticks for our New Years midnight snack for the kids.

BUKO SALAD

TRIBEs Buko Salad are served in individual containers to be consumed in one go. I find it more hygienic and you only defrost what you need.

BANANA TURON

While buying some Magnolia Ice Cream Tubs from an Asian Supermarket near our suburb, I saw this frozen Banana Turon in their freezer. Curiosity got the better of me and I bought a packet so happy I only bought one packet as I will not buy this stuff ever again. When you cook them even when the oil was not too hot this Banana Turon burns in some parts. It does not look appetizing and the taste was only passable.

NEW YEAR 2015 FRUITS

It is the tradition among Filipinos to greet New Year with an array of round fruits. it should be 13 pieces of different round fruits as a sign of luck and prosperity. For the people who are not aware, Philippines is a melting pot of cultures that we carry on some of the traditions other countries have and one of them is Chinese. Chinese sees the number 13 in their culture as a lucky number and the round fruits symbolizes coins which represents wealth. who would want to argue with that, bring on the round fruits!

Personally, I just tend to grab whatever fruits the TRIBE will eat as long as most of them are round, I tend to bend the rules a little bit. lol!

FORTUNE COOKIES CORN TUBES SNACKS

I saw these two items while shopping in one of my favourite Asian store the day before and I have to buy them. The Fortune Cookies taste like Egg Roll Biscuits and the Corn Tubes taste like Cheez Curls with corn flavour. They were wrapped in yellow and gold foil individual packets, that they reminded me of gold nuggets.. so for luck and prosperity Ive included them in our TRIBEs New Year spread.

Now that I have edited and layout the New Year 2015 food pictures for this post, one thing Ive noticed most of the food we cooked was pulutan (dishes for drinking session). *wink *wink *wink, hehehehe! Overall the spread we shared to celebrate the New Year was good, not to heavy for a midnight snack. Well be doing this kind of New Year food spread while the kids are still young, its easier and practical.

Apology for the lateness of this post as you know SAHM duties are unpredictable and never ending. So, for now. all I want to say to you all, may we all have a fantabulous 2015!
