Since 1932 Champagne Taittinger has grown and taken its place among the great Champagne houses.

Pierre-Emmanuel Taittinger bought back the family business in the summer of 2006. He has since, surrounded himself with a young team that is bound together by a spirit of conquest and continuity. His daughter Vitalie and son Clovis have accompanied him on this adventure.

Taittinger Brut La Française is a blend of wines from over 35 different vineyards and vintages matured to perfection.

This high proportion of Chardonnay, unique among fine non-vintage champagnes, and a minimum aging of three years in the cellars, where it reaches the peak of aromatic maturity, make Taittinger Brut La Francaise a delicately balanced champagne.

Tasting Notes

The brilliant body is golden yellow in color. The nose, very open and expressive, delivers aromas of fruit and brioche, fragrance of peach, white flowers (hawthorn, acacia) and vanilla pod. Shop BILLECART-SALMON -Ros Brut - Champagne, FRANCE. $90.00

The Billecart family has been living in Mareuil-sur-Ay since the 16th century. When Nicolas Francois Billecart married Elisabeth Salmon in the early 1800s the two families' long held vineyards were married as well. This led to Nicolas' decision to leave his law practice and take over the family wine estate. In 1818 he founded the house of Billecart-Salmon which now stands as the oldest continuously family owned and operated house in Champagne. It is currently managed by the seventh generation, brothers Francois and Antoine Roland-Billecart. The cellars are in the hands of renowned "chef de cave" Francois Domi.



Tasting Notes

Persistent mousse, with fine bubbles rising slowly. Pale salmon pink in color, with a shade of gold. A nose of red fruits and fresh pear. Delicate fruit on the palate, elegant, and showing great finesse. Shop PARIGOT, Crment de Bourgogne Rouge Brut $28.00

The appellation Bourgogne Mousseux Rouge was established in 1943. It recognized transforming all Burgundy wines into sparkling wines by using the traditional method. However, since the creation of the appellation Crémants de Bourgogne, it applies only to the red sparkling wines. The Parigot house has remained loyal to this tradition and creates sparkling red Burgundies from a strict selection of Pinot Noir. A long aging in the cellars brings it to full maturity. Its dark ruby colour announces a solid structure composed of fine, elegant tannins. Its unique effervescence enhances the traditional bouquet of Burgundy wine. Served chilled, the audacity of pairing it with the most ordinary dishes will surprise.

The vineyard for this wine is located on a hillside, planted on south- and west-facing slopes which benefit from maximum exposure to the sun’s warmest rays.

Being located in a cooler climate, this type of sun exposure is ideal for maximum fruit ripeness levels.

Varietal Composition: 100% Chardonnay



Elaboration: The grapes harvested with machines are pressed in order to extract the juice, which is placed after in a vat to a static racking of the must. The clear juice is lodged in barrels and in vat where it will be sowed in yeast to start off the alcoholic fermentation. Temperature controlled fermentation occurs between 61 and 66° F in order to obtain a youthful aroma. After 10 days of fermentation, the wines are racked and cellared. Wines stay in the cellar for 6 months where it undergoes malolactic fermentation, which allows a stabilizing of the structure of the wine.



Tasting Notes: This wine has a firmness, tempered by the softness of Chardonnay. Its structure is both elegant and strong thanks to the time it spends in new oak barrels. Nice gold color.
