This Post is brought to you by David Jones. No comments: Location:Singapore Friday, 19 November 2021 COCA Restaurant Pao Fan ">COCA Pao FanCOCA Restaurant Singapore has recently launched their unique version of Pao Fan. Drawing inspirations from their mouth-watering broths, combining them with fresh and premium ingredients, you can look forward to the delicious and comforting meal not only at their restaurant but also at home.

We received our Pao Fan through delivery. The first thing that we notice is each Pao Fan set is separated and packed neatly into 3 different packages. The plastic container contains the steam rice, proteins and vegetables plus it is microwaveable. The second, paper base bowl will contain the condiments / toppings, crispy rice, deep-fried egg floss, spring onions and chilli. The final container is the soup bag, which contains 1 litre of double-boiled chicken soup.
HuaDiao Chicken Pao FanHua Diao Chicken Pao Fan ($15.90). Its proteins and vegetables are drunken chicken drumstick, milk cabbage (nai bai), shiitake mushrooms and black fungus. The solid double-boiled chicken soup is infused with a high-grade hua diao wine. When we slurp the soup, we can taste the nice aroma with the sweetness of the wine in the broth and it does not have any bitter taste from the alcohol.
HuaDiao Chicken Pao FanI like the crunchy black fungus that compliments the rest of the ingredients, including the combination of steam rice and crispy rice. The drunken chicken drumstick is tasty but slightly chewy. Tasted more like a Kampong Chicken.
HuaDiao Chicken Pao FanSliced Fish Pao Fan ($15.90). A simpler version of the Pao Fan. It uses double-boiled chicken soup and the sliced fish as the protein. The broth is robust and filled with the essence of chicken, bodes well with the sliced fish and other ingredients.
SlicedFish Pao FanSliced Fish Pao FanSeafood Pao Fan ($16.90). I will call this the upgraded version of sliced fish pao fan. Other than sliced fish, you also get prawns and flower claims here. Since the ingredients and the broth are not cooked together, the seafood flavour is not infused into the broth.
Seafood Pao FanSeafood Pao FanCBK Verdict: It is a delicious creation from COCA Restaurant. The flavours are robust, the ingredients are fresh and the broths are very generous. For a small eater, one portion of the pao fan can easily satisfy 2 people.

This year buffet theme remains as Fine-Dining Buffet, where each order will be nicely plated by the Chefs and served to your table.
Cheers!!We started the Festive Menu dinner with Red and Green Colour Mocktails, inspired by the popular show Squid Game. The red mocktail is concocted from cranberries juice, it has the acidity to perk up your appetite, while the green mocktail is made from refreshing lime.
The Table SettingHere are the highlights of this year festive menu:Frutti Di Mare Platter, consist of Boston Lobster, Alaskan King Crab, Oysters and Prawns. What a luxurious seafood platter. The lobster is sweet and bouncy, while the Alaskan King Crab legs are packed with juicy flesh. Looking at the fresh oysters just brings back the memories where you can walk to the seafood bar and see the chef shucking the oysters and you can choose from three to five types of oysters in one seating.
FruttiDi Mare PlatterThere are three sauces to compliment the seafood platter, tartare, seafood sauce and vinaigrette.
The SaucesTruffled Turkey and Caramelized Onions Pincho. Pincho means a small snack in Spanish. It has a combination of sweet (caramelized onions candied orange) and savoury (truffled turkey), followed by a kick from the garlic cream cheese. A nice intermission between the two seafood dishes.
Truffled Turkey and Caramelized Onions PinchoSnapper and Pineapple Ceviche, Gazpacho. A refreshing seafood dish. The snapper is cured with sweet and refreshing pineapple. The pickled onions added some sparks to the dish, while Spicy Salsa is surprisingly mellow.
Snapperand Pineapple Ceviche, GazpachoSnapperand Pineapple Ceviche, GazpachoFoie Gras Egg, Wild Mushrooms Truffle Toast. Suitable for the all-day breakfast festive theme. The poached eggs are perfectly cooked and the yolk slowly oozes out when you cut through it. It is followed with bold flavours from truffle, wild mushrooms and foie gras. To balance the rich flavour, bite into the acidic lingonberries. Yumz!!
FoieGras Egg, Wild Mushrooms Truffle ToastFoieGras Egg, Wild Mushrooms Truffle ToastFrom the Chefs Carving Trolley, we have Whole Roasted Turkey with Brandy infused Turkey Gravy. LD and I are always impressed on how Chef Mandar and his crew at Oscars always get their turkey juicy and succulent, including the breast meat. We like the medley of flavours from Spiced Caramel Glazed Chestnuts, Roasted Brussels Sprouts plus the gravy. For the bread stuffing, it is slightly dry to my liking, therefore best eaten with more gravy on top. LD always say that it is the only Roast Turkey that she likes.
Chefs Carving Trolley
WholeRoasted Turkey withBrandy infused Turkey Gravy
Partnering the turkey on the Carving Board is Dry Rubbed Whole Roasted Ribeye. The ribeye has a good crust around the exterior, followed by tender flesh with a slightly resilient texture. The roast beef is served with horseradish slaw and peppercorn jus.

Meanwhile, their Festive Barbeque selections offered this delicious Rosemary Garlic Marinated Lamb Chop, Chestnut and Cranberry Stuffed Chicken Wings and Orange Thyme Australian Quails.
Orange Thyme Australian QuailsThe Quails is excellent. It is juicy, delicate and packs with a beautiful smoky aroma from the bbq. However, if you are not keen on quails, go for the stuffed chicken wings. It is stuffed with chestnut and cranberry, almost the size of a roast duck drumstick. HUGE!
Chestnut and Cranberry Stuffed Chicken Wings
Chestnut and Cranberry Stuffed Chicken WingsRosemary Garlic Marinated Lamb Chop has a nice charred exterior, followed by a slightly chewy texture. The gaminess from the lamb chop is a bit strong, however, the pomegranate glaze and mint oil help to offset it.
Rosemary Garlic Marinated Lamb ChopWe finally arrive at the dessert. Bitter Sweet Chocolate Yule Log, Panettone Yule Log, Traditional Stolen and Pecan Tart. The mini bittersweet chocolate yule log and panettone yule log gets my pick. Not only the designs are cute and adorable, but they are also delicious. Yummy!
The DessertTraditional Stolen Bitter Sweet Chocolate Yule LogPecan Tart Panettone Yule LogOverall, it was another great preview from Oscars for its Festive Offerings at Oscars. If you are planning for your Christmas gathering with your family, better to book soon as they are running out.

No comments: Location:2 Temasek Blvd, Singapore 038982 Tuesday, 2 November 2021 Dignity Kitchen Good Food for Good CauseFish'N'ChipsDuring this stabilisation period, I saw frequent posts in FB Group calling for support of this makan place. Dignity Kitchen by Project Dignity is a food court run by people with disabilities (physical and intellectual) and disadvantaged (social and mental).
Dignity KitchenProject Dignity has a mission to restore dignity to different-abled and disadvantaged through vocation with passion. Project Dignity provides sponsored training for unemployed adults with special needs and places them with our employment partners within the FB, hospitality and retail sectors. Some of the graduates will be hired in their food court (Dignity Kitchen) and book retail stores (Dignity Mama). For more information on Project Dignity, you can check them out here.
Stalls 1Dignity Kitchen is a food court concept, with the following stalls Nasi Lemak, Chicken Rice, Claypot Rice, Rojak, Noodle, Western, Bakery, Fruits and Nanyang Kopi. When you enter the food court, you just place all your orders at the cashier and wait for your number to be called on the screen. Afterwards, proceed to the designated stall for collection. All the stalls and cashier are manned by the differently-abled and disadvantaged crew.
Stalls 2On my first visit to Dignity Kitchen with my regular makan kaki K. We ordered Signature Rojak ($4) to share. The portion is very generous, consisting of fruits, vegetables, youtiao, coated evenly with the rojak sauce and sprinkle with ground peanuts. The ingredients are fresh, the sauce is thick, however, it can be better if fermented prawn paste is stronger to give the sauce more OMPH.
Signature RojakFishNChips ($6.50). A huge place of fish and chips. The batter is crispy and the fish is flaky. I found out later that they use a higher-grade dory fish for the fish and chips. The crinkle fries are crisp externally and moist internally. There is fresh salad, lemon wedge on the side and mayonnaise as a dipping sauce instead of tartar sauce. The fish and chips here have the same standard as those in bistros or gastropubs.
Fish'N'ChipsFlaky Dory FishK decided to have Chicken Chop ($6.50). Since he is watching his carbo intake, he only has protein and vegs. I tried a bite of the chicken chop, it is juicy, succulent, with a touch of crispiness externally.
Chicken ChopWe also tried their Muffins ($2.50 each). There are moist, light and packs with flavour, especially the Oreo Chocolate Flavour Muffin.
MuffinsOn the second visit, I had Nasi Lemak with Beef Rendang ($4). Looking at the portion, you are likely to pay more outside. The rice is rich and fragrant, while the beef rendang is tasty and succulent. The achar is a bit spicy, yet refreshing.
Nasi Lemak with Beef RendangLD ordered Prawn Laksa ($5). According to her, the broth is rich, lemak and packs a good spicy kick. The portion is generous and the prawns are fresh. A very good serving indeed.
Prawn LaksaThe environment at Dignity Kitchen is clean, tidy with simple furnishing and air-conditioned. While dining at Dignity Kitchen, you can also see the two training classes use to Train-and-Place programme for adults with special needs seeking employment; and for WSQ and SkillsFuture eligible hawker culinary courses for the public.
Menu 1CBK Verdict: Although Dignity Kitchen main mission is a social enterprise, the food serves here are of a good standard. They are also tasty and generous with their portion. What better way to support a social cause with a happy tummy. Cheers!
Menu 2Here are some ways you can contribute to the operation cost of the Dignity Project:- Dine or Take Away on food from Dignity Kitchen- Take a course at Dignity Learn. An inclusive training centre that provides WSQ and SkillsFuture eligible hawker culinary courses for the public. Fresh Tuna @ Pohang SeafoodOur first Korean style sashimi meal experience was during our first trip to Jeju in 2017. It was a gastronomic experience, though I must admit it is not something that I eat frequently. Last year, we found a Korean restaurant serving Korean Sashimi on the east side of Singapore and Pohang Seafood is the second restaurant that we tried in Singapore.
Pohang Seafood SGWe decided to try this after I saw the IG post of Bjorn Shen, one of the judges of Master Chef SG. For the meal, we choose Fresh Tuna and Flatfish set (small, $180, recommended for 2 pax). One thing for sure, when you order the meal, it is like a banquet that will knock you over.
In a typical Korean meal culture, they flooded your table with side dishes at the start. Here, the banchan consist of salmon sashimi, acorn jelly, Mulhoe (Spicy raw fish soup), porridge, broccoli, corn with cheese, mini seafood pancake, salad with mayo and kelp soup.
Banchan Part 1
Salmon Salmon BellyFor the salmon sashimi, each person has a thick slice of the regular part and another slice of the salmon belly. Both are smooth and delicious. The porridge is subtle, thick yet tasty, while the corn is slightly charred, sweet and topped with cheese. It can do with a bit more cheese and more charred.
Porridge, Mulhoe and Corn with CheeseThe mini seafood pancake is crispy and enjoyable. Mulhoe is a cold spicy raw fish soup, as a side dish the version is much simpler and it plays a dual role as an appetizer and palate cleanser. It tasted icy, tangy, spicy yet refreshing. It is a bit too spicy for my liking, but LD enjoys it, and also enjoyed the acorn jelly. Instead of mulhoe, I enjoy the subtle flavour of the sea in the kelp soup.
Mini Seafood PancakeAcorn JellyThe steam egg followed soon together with the next seafood treat of Abalone and Sea Squirt. The abalone is thinly sliced, delivering a familiar Korean abalone crunchy texture. Opposite to the abalone texture, the sea squirt inner part is soft with a touch of chewiness, it has a slight bitter taste but one thing for sure they are very fresh. However, the skin of the sea squirt is super chewy, I dont recommend you eat that.
Steam EggAbalone Sea SquirtAbalone Sea SquirtFor the seafood, there are 4 types of dipping sauce. Soy sauce, wasabi, sesame oil with salt and doenjang-banga (Korean raw fish dipping sauce, thick). On the table, there is also a bottle of cho-jang (the lighter sweet and spicy sauce).
The Sauces - Cho-Jang, Sesame Oil with Salt
Soy Sauce with Wasabi and Doenjang Banga
Next up will be the WOW and IG moment. San-nakji (LIVE Octopus seasoned with sesame oil). Yes, you can see the chopped tentacles still moving. Taste-wise, it is almost tasteless but the bouncy texture is intriguing. The texture of the tentacles part tasted a bit rough because of the suction cups, while the head or upper part tasted smooth and velvety. Not a spicy lover, I decided to create my own sauce, using soy sauce and lemon juice (there are lemon wedges served with the seafood). The combination of salty and tanginess, extract the natural sweetness from the octopus. Yum!!

LIVE OctopusNow is the turn for the Tuna sashimi, served with perilla leaves and seaweed. The portion is huge, there were about 30 slices on the plate. From the colour of the tuna, you can see it consist of different part of the fish. The darker colour is the leanest and the lighter colour is fattier. There are two premium cuts on top, looks like the fattiest version as it is covered in fats. We thought the two pieces will melt in your mouth, instead, a tendon-like chewiness paired with the fatty texture. An interesting surprise.
Fresh Tuna with Perilla Leaves and SeaweedFresh TunaThe Premium SliceThe flatfish sashimi also comes in the same size. It offers a meaty and resilient texture. The regular cuts offer a very subtle sweetness, almost like a blank canvas, where you can dip it in any sauces that you like. The premium cuts (the creamy colour) have a stronger flavour; however, it is chewier.
Flatfish SashimiI find the portion of the sashimi is very generous, to the point of overwhelming. My secret weapon here is the lemon. Not only it helps to cuts through the fats of the protein, but it also helps to extract the natural sweetness of the seafood. I use the lemon to mix with soy sauce or the sesame oil salt dip; while LD uses it together with the doenjang and cho-jang.
Tuna with Seaweed and Perilla LeafSince there are a lot of slices of tuna and flatfish, you should experiment with different ways to eat the sashimi. I tried one with just the seaweed and another with just perilla leaf, it delivers a unique, yet delicious flavour.
Flatfish with SeaweedFor those who never tried Korean Sashimi, please take note that the sashimi is served at ROOM TEMPERATURE. Just like the sashimi served in a high-end Japanese restaurant. The seafood here is likely still swimming in one of the aquariums when you walk into the restaurant and prepared after they got your order. Therefore, this is probably one of the freshest sashimi you can get in Singapore.
Once you almost complete your sashimi, they serve fish roe hand roll. It has an earthy vegetable taste, followed by bursting fish roe flavour. On your second bite, you can taste the pickle vegetables hidden below that helps to cuts through the rice the richness of the fish roe.
Fish Roe HandrollThe finale is fish hotpot. It uses the leftover cuts from the flatfish and the head, cooked with potato noodles, radish, vegetables and zucchinis. The soup tastes clean and the red pepper helps to cleanse the overwhelming flavour from the heavy meal. We were stuffed before we start the fish hotpot, so after the first bowl, we ask them to pack the balance of the hotpot for LDs dinner the next day.
Fish HotpotFlatfishThe décor of the restaurant is very simple and bare minimum. It feels like you are dining in a takeaway Korean sashimi joint, where the dining area a simply furnished with foldable chairs, DIY tables and transparent disposable plastic table cloth. The service is prompt and friendly. During our diner there, we notice the majority of their customers are Koreans and most of them order for takeaway. When they are talking, you can easily feel that you are in Korea.
The Interior DecorOverall, having experienced a few Korean sashimi meals in Jeju and Singapore, I like Pohang Seafood SG the most. The seafood is fresh, the portion is generous and we can experience this wonderful food without leaving our shore. Awesome and we look forward to our return visit with our makan kakis. Geonbae!! Cheers!!
