OUR TIMELESS WHISKEY honours both the history and the people behind the birth of the Proclamation, the document which proclaimed the establishment of the Irish Republic in 1916; the pivotal role they both played at the turn of the 20th Century coupled with their enduring importance in the 21st

OUR DESIGN

OUR CONTEMPORARY DESIGN reflects the physical attributes of the original document. As the printers had insufficient type to print it all at once it had to be printed in two parts.

The label includes blind embossing, while fonts were specially redrawn to emulate those of the Proclamation, such as the spurious ‘e’ that features in the original document.

OUR ORIGINAL
BLENDED IRISH WHISKEY

PROCLAMATION IRISH WHISKEY is a blend of the finest grain whiskies from across Ireland. Timelessly crafted in small individual batches offering a liquid of complex, yet refined character.

THE LIQUID is tripled distilled and aged in new American Oak, offering up a singularly smooth whiskey with a clean taste.

MATURED IN bourbon casks & blended with a touch of sherry-finished malt to give a rounded, toasted finish.

TASTING NOTES

NOSE

FIRST TO BE REVEALED is ripe Williams pear, followed by an abundance of apricot and creme brulée notes. Slowly developing through to rich custard, freshly brewed cappuccino and ending with woody notes.

MOUTHFEEL / PALATE

FRONT LOADED NOTES of toasted brioche, freshly baked pastry and overtones of macerated yellow fruits. Fusions of tannins on the mid-palate with a robust yet rounded finish.

AFTERNOTE

OVERWHELMINGLY SMOOTH and creamy with a mellow finish, with hints of toasted cereal.

OUR RECOMMENDATION
The fabled Whiskey Clarke Cocktail pays homage to Thomas James Clarke, the first signatory in 1916 of The Proclamation.

60ml - Proclamation Blended Irish Whiskey

25ml- Freshly squeezed lemon juice

15ml – Sugar cane syrup ((Our recommendation is Giffard)

3 dashes Angostura Bitters

Topped up with freshly drawn soda water

Garnished with dark maraschino cherry on a stick and with a twist of orange peel

Shaken over ice, strained then stirred into ice filled glass

PROCLAMATION WHISKEY SODA

- Proclamation Whiskey

- Ice

- And soda to your taste

Garnished with a lime

SUMMER WHISKEY SOUR

- 1.5 parts Whiskey

- 1 Lime juice

- 1 Raspberry Syrup

- Half of one egg white

- 2 dashes Angostura bitters

Shake together in cocktail shaker and serve over ice.

Garnish with raspberry sitting on basil leaf.

Proclamation Coffee

60ml - Proclamation Blended Irish Whiskey

25ml- Freshly squeezed lemon juice

15ml – Sugar cane syrup ((Our recommendation is Giffard)

3 dashes Angostura Bitters

Topped up with freshly drawn soda water

Garnished with dark maraschino cherry on a stick and with a twist of orange peel

Shaken over ice, strained then stirred into ice filled glass

Pour whiskey into heat resistant glass. Add hot coffee. Add sugar. Slowly pour lightly whipped cream over the back of a spoon on top of coffee.
