To cook it, slow simmer the bone for at least 24 hours to produce a clear broth that is enhanced with vegetables like young corn, Petchay Baguio and potatoes. Remove excess fat before serving, for both health and aesthetic reasons.

  

PinakbetFamous Ilocano foodPinakbet or pakbet is one popular Ilocano food, from the northern regions of the Philippines, although it has become popular throughout the archipelago. The word is the contracted form of the Ilocano word pinakebbet, meaning shrunk or shriveled. Pinakbet is a combination of several variety of vegetable like, native bitter melon, eggplant, tomato, ginger, okra, string beans, lima beans, chili peppers , parda and winged beans. A Tagalog version usually includes calabaza. Traditionally Ilocano cook Pinakbet by using bagoong, of fermented monamon or other fish, while further south, bagoong alamang is used. Pinakbet is considered as a very healthy food and convenient in relation to the harsh and rugged, yet fruitful Northern and Ilocos regions of the Philippines.

Halo-haloRefresh your cravings during summerHalo-halo is a favorite Filipino dessert or snack. It is basically a mixture of sweet preserved beans(red beans, chick peas), coconut meat (macapuno), jackfruit (langka), pounded dried rice (pinipig), sweet yam (ube), cream flan (leche flan), shreds of sweetened plantain (saba), filled with crushed ice, milk (or coconut milk) and topped with ice cream. The halo-halo basically is sweet, creamy, and a filling dessert.

Halo-halo is very popular during hot summer months (March-June) in the Philippines. It is usually served in tall, clear glasses that show its colorful contents that tempt ones taste buds. Ones thirst is even made worse by the perspiring ice-filled glass, and the melting ice cream on top.

Then this is mixed with other ingredients like sugar and salt in delicate proportion, and afterwards individually wrapped in fresh banana leaves, or young ibus leaves of coconut palm.

Bilang pagbibigay pugay sa kahalagahan ng industriya ng tuna sa General Santos, ay ipinagdiriwang ang Tuna Festival tuwing buwan ng Setyembre. Sa pamamagitan ng iba’t ibang mga gawain at aktibidades ay naipapakita ang pangunahing pinagmumulan ng pinagkakakitaan mula sa tuna ng mga residente ng naturang lugar.

Tuna Capital ng Pilipinas

Taun-taon, nagpapalabas ng humigit kumulang sa 400, 000 metric tons ng tuna na may halagang 18 bilyon piso o 330 milyong dolyar. Ayon sa ulat ng Kagawaran ng Agrikultura at Bureau of Fisheries and Aquatic Resources, 85 porsyento nito ang iniluluwas sa iba’t ibang rehiyon, kabilang na dito ang Japan, Estados Unidos, at Europa.

Itinuturing ang General Santos bilang pinakamalaking tagapagbigay ng empleo dahil sa industriya nito ng tuna. Ito ang pinakamalaking tagapagluwas ng sushi at sashimi sa Hilagang Amerika, Europa, at Japan. Ang industriya ng tuna ang nagbibigay sa mga mamamayan ng 100, 000 na trabaho para sa mga mangingisda, at mga manggagawa sa pabrika. Anim sa mga tuna cannery ng bansa ay nakabase sa naturang siyudad.

Noong 2007, 33 porsyento o 183, 000 metric tons ng pambansang produkto ng tuna ang naitala at ang kabuuang produkto nito ay 9.5 bilyon na kumakatawan bilang pangatlo sa kabuuang produkto ng bansa.

Bilang pagbibigay pugay sa kahalagahan ng industriya ng tuna sa General Santos, ay ipinagdiriwang ang Tuna Festival tuwing buwan ng Setyembre. Sa pamamagitan ng iba’t ibang mga gawain at aktibidades ay naipapakita ang pangunahing pinagmumulan ng pinagkakakitaan mula sa tuna ng mga residente ng naturang lugar.

Taun-taon, nagpapalabas ng humigit kumulang sa 400, 000 metric tons ng tuna na may halagang 18 bilyon piso o 330 milyong dolyar. Ayon sa ulat ng Kagawaran ng Agrikultura at Bureau of Fisheries and Aquatic Resources, 85 porsyento nito ang iniluluwas sa iba’t ibang rehiyon, kabilang na dito ang Japan, Estados Unidos, at Europa.

Itinuturing ang General Santos bilang pinakamalaking tagapagbigay ng empleo dahil sa industriya nito ng tuna. Ito ang pinakamalaking tagapagluwas ng sushi at sashimi sa Hilagang Amerika, Europa, at Japan. Ang industriya ng tuna ang nagbibigay sa mga mamamayan ng 100, 000 na trabaho para sa mga mangingisda, at mga manggagawa sa pabrika. Anim sa mga tuna cannery ng bansa ay nakabase sa naturang siyudad.

Noong 2007, 33 porsyento o 183, 000 metric tons ng pambansang produkto ng tuna ang naitala at ang kabuuang produkto nito ay 9.5 bilyon na kumakatawan bilang pangatlo sa kabuuang produkto ng bansa.

Kasaysayan

Pangatlong ulit nang naparangalan ang siyudad ng General Santos bilang “Most Competitive City” noong 1999-2000 (sa lahat ng siyudad), 2000-2001 (sa mga mid-sized na siyudad) at noong 2001-2002. Ang parangal na ito ay ipinagkaloob ng Asia Institute of Management SGV Policy Forum at ng Department of Trade and Industry.

Marahil, hindi katulad ng ibang mga prominenteng kasayahan dito sa Pilipinas na nagsimula sa isang konseptong naiplano, ang tuna festival ay nagmula sa isang hindi inaasang ideya. Noong 1998, sa pagdiriwang ng ika-30 City Charter Anniversary, nagtatag ang General Santos City Tourism Association (GSCTA), isang organisasyon ng mga hotel, resort, restaurant, travel agency, at iba pang mga establisamiyentong nais iangat ang turismo. Ang pagdiriwang, na pinangungunahan ni G. Liwanag Ferrer, ay ginanap sa Halieus Mall na ngayon ay mas kilala bilang RD Plaza. Ipinapakita ang iba’t ibang mga putahe mula sa tuna sa pamamagitan ng patimpalak sa kulinarya, at mga pagtatanghal upang maipakita ang kasaganaan ng tuna sa nasabing lugar. Naisip ng dating meyor na si Adelebert W. Antonio na maaari itong maging paksa para sa isang piyesta.
